Today, stainless steel is frequently chosen as the material for wine production equipment due to its excellent corrosion resistance, durability, and ease of cleaning. During fermentation, stainless steel tanks do not impart additional flavors to the wine. Another advantage is that stainless steel tanks have a longer lifespan compared to traditional oak barrels. Oak lasts about 3-5 years before needing replacement, and the deterioration of oak due to the acidity of wine can be problematic when controlling oxidation.

Wine fermentation tanks can be made from AISI 304 and AISI 316 Stainless Steel. The main difference here is that the residues from yeasts and acids settle at the bottom during fermentation, and the ease of cleaning tanks is an important factor when choosing stainless steel. This hygienic property is one of the reasons stainless steel is so popular. Both white and red wines create different residue characteristics in tanks, and as a simple rule, 304L is suitable for most red wine fermentation tanks, while 316L is more suitable for white wines. 316L contains molybdenum, which enhances corrosion resistance, especially against sulfur, which is added to some white wines and later produces sulfur dioxide as a by-product.
